Ingredients
- 1 1/2 lb Baby Red Potatoes
- 1 tbs Oregano
- handful Parsley
- handful Cilantro
- 2tsp Black Pepper
- 1/2 Cup Extra Virgin Olive Oil (EVOO)
- Salt to taste
- 1/4 cup Parmesan cheese
- 1 lb Medium to large Shrimps
- 1/2 cup lime juice
Directions
- Wash and cut potatoes to bite size
- Place them in a large bowl, add EVOO and the rest of the ingredients with the exception of the: parmesan cheese, shrimps and lime juice.
- In a separate bowl place shrimps and lime juice.
- Refrigerate both bowls for at least 1 to 2 hour.
- While the oven get’s preheated to 350 degree, steam the potatoes for just about 8 minutes.
- Transfer to an oven safe pan
- Bake for 15 minutes, add parmesan cheese and shrimps.
- Bake for an additional 10 minutes, if you like them a bit on the crunchy side broil for 7 minutes before taking out.
Plate and enjoy, no need for a side dish, great by itself.
