Potatoes with Shrimps

We really enjoy eating shrimps, done in many different ways. We often add them to our salads, veggies and many other things.

Today we are sharing with you our delicious potatoes-shrimp with tasty spices and cooked to perfection, while we recommend and like to marinate both the potatoes and the shrimps separately and for a few hours this is not necessary and this recipe could be done by skipping this step if needed.

  Serves: 3 - 4  |  Complexity: Easy
Ingredients
  • 1 1/2 lb Baby Red Potatoes
  • 1 tbs Oregano
  • handful Parsley
  • handful Cilantro
  • 2tsp Black Pepper
  • 1/2 Cup Extra Virgin Olive Oil (EVOO)
  • Salt to taste
  • 1/4 cup Parmesan cheese
  • 1 lb Medium to large Shrimps
  • 1/2 cup lime juice
Potatoes with Shrimps
Directions
  1. Wash and cut potatoes to bite size
  2. Place them in a large bowl, add EVOO and the rest of the ingredients with the exception of the: parmesan cheese, shrimps and lime juice.
  3. In a separate bowl place shrimps and lime juice.
  4. Refrigerate both bowls for at least 1 to 2 hour.
  5. While the oven get’s preheated to 350 degree, steam the potatoes for just about 8 minutes.
  6. Transfer to an oven safe pan
  7. Bake for 15 minutes, add parmesan cheese and shrimps.
  8. Bake for an additional 10 minutes, if you like them a bit on the crunchy side broil for 7 minutes before taking out.

Plate and enjoy, no need for a side dish, great by itself.
