Written by Crafty Spices
No dessert?, No problem.
Carrots and Pineapples can save the day. And to make it even simpler let's try it with canned pineapples and carrots, I'm sure it will taste equally delicious. Yes, most of the time fresh means better but in this case most people could not tell the difference.
This recipe is adaptable to many fruits and veggies, yet pineapple and carrots is not only a great combination, but is what we had at the moment.
Ingredients
- 1 can Pineapple Chunks
- 1 can dice carrots
- 1 cup of sugar
- 1/2 cup raisins
- 2 or 3 sweet cloves
- 2 cinnamon sticks
-
1/4 cup water
(if using fresh ingredients use more water)
Directions
- Pour water, cinnamon sticks, raisins, sweet cloves, and sugar in a pot at low-medium heat until sugar is melted and raisins are soft.
- Add can of pineapple with 1/2 of it's liquid, rinse carrots and add as well. Lower the heat and let boil for 8 to 10 minutes.
- Serve warm as is, or over a scoop of vanilla ice-cream
